About Quinoa
Quinoa is an ancient food crop from the Andean region of South America. Unlike most grains, it grows best at high altitudes. Quinoa is noteworthy for its significant protein content, and an amino acid profile that is very well balanced for people. Most importantly for many in North America, quinoa is gluten free and thus can be consumed by people with celiac disease or other forums of gluten sensitivity.
Quinoa can be cooked in water like rice, or ground into a flour that is a workable alternative to wheat flour. Served with honey and fruit it makes for an excellent breakfast cereal.
Quinoa is available in many organic markets or in the organic section of supermarkets.
